Dried cod fish in potacchio

| Preparation: Cut the cod fish into even sized pieces after having washed and dried it. In a saucepan, sauté the sliced onion in oil, then add the boned anchovies and a mixture of finely chopped rosemary, one clove of garlic and some parsley. Once it has sautéed for a little while, add the skinned and broken up tomatoes, a small piece of chopped up chilli pepper and the cod fish. Wet with the white wine and cook over moderate heat for about 1 hour; then season with pepper, taste and, if necessary, add salt. |
