Mussel soup marinara style "Zuppa di cozze alla marinara"

Ingredients, amounts for 4 people:
  • garlic: 1 clove
  • mussels: 4 lbs 8 oz
  • olive oil:
  • toasted bread: sliced
  • parsley: 2 tbsp
  • salt:
  • dry white wine:
Preparation:
Pour the oil into a casserole dish, add the garlic and the parsley and sauté. Wash the mussels (brushing and scraping the shells well) and then add them to the dish. Wait until they open, then wet them with 2 small glasses of wine, season with salt and continue cooking. If required, add a little broth/stock. To make the sauce a little velvety in texture, add a few pinches of white flour previously made into a paste with a knob of butter (this will prevent the formation of lumps). Serve the soup on slices of bread.
