Dried cod Accomodato ''Stoccafisso accomodato''

| Preparation: Wash and bone the fish. Cut into strips of about 5cms. Chop the sardines together with the carrot, onion and garlic and brown in a casserole with a little of the oil, pine kernels and olives. When they begin to take colour pour over the half glass of wine and leave to evaporate. Add the dried cod and after some minutes the peeled and chopped tomatoes and chopped potatoes. Add salt and pepper to taste and continue with the cooking adding some hot water a little at a time some hot water. Cook for another hour until the potatoes are soft. At the end there should be only a little sauce. Serve. |
