Bread baked with an onion and sugar topping "Fitascetta"

Ingredients, amounts for several people:
  • butter: 2 oz
  • red onion: 1 lb 2 oz

Preparation:
Slice the onions and sauté in the butter, cooking over a moderate heat for about 1 hour. Lightly season with salt. Add a little warm water to the bread dough and then form it into a long sausage shape. Place this onto a baking tray lightly greased with oil, forming a circle of 15-20 cm (6"- 8") in diameter, keeping the hole in the middle as large as possible. Distribute the onions on the surface of the bread, dust with a little sugar and cook in a moderately hot oven (190°C/375° F/Gas Mark 5) for about half an hour. You will obtain a low, golden coloured, fragrant ring which is best eaten hot.
