Fritters Pavese style "Frittelle alla pavese"

Ingredients, amounts for several people:
- flour: 7½ oz
- milk: 1 glass
- seed oil for frying:
- salt:
- eggs: 3
- golden raisins (from Sicily): 2 oz
- sugar:

Preparation:
Soften the sultanas by soaking in warm water for no longer than ¼ of an hour. Put the flour in a mixing bowl , add the cold milk slowly, mixing with a wooden spoon until a fairly dense batter is obtained. Add a pinch of salt, the drained sultanas dried in a thin cloth, and the whole eggs. Mix all the ingredients together well. Make the fritters by frying spoonfuls of the batter in the oil. Allow the fritters to cook on moderate heat, remove and drain when they are a light golden colour. Dip into the sugar and serve hot. |
