Asparagus Milanese style "Asparagi alla milanese"

Ingredients, amounts for 4 people:
  • asparagus: 3 lbs 6 oz

  • grated Parmesan cheese:
  • salt:
  • eggs: 4
Preparation:
Cut off the asparagus so that they are all the same length and scrape them with a small knife to remove any earth. Wash them, tie them together and then put them into a tall, narrow saucepan with enough water to cover half their length; in this way, the tips will be steam-cooked. Once they are cooked, drain them and arrange them on an oval serving plate with their tips in the centre. Cover them with the grated Parmesan cheese. Fry the eggs in plenty of butter and place on top of the asparagus - the eggs should be hot enough to slightly melt the grated cheese. The asparagus may also be served with just the melted butter, without the eggs.
