Fried Pumpkin ''Zucca fritta''

Ingredients, amounts for 4 people:
  • butter: 3 ½ oz
  • white flour: 2 oz
  • milk:
  • breadcrumbs:
  • salt:
  • eggs: 2
  • pumpkin: 1 lb 5 oz
Preparation:
Remove the rind and seeds of the pumpkin and cut into medium slices. Put the slices in a casserole dish and add salt to taste. Cover with the milk and cook for 10 minutes then drain. Beat the eggs in a mixing bowl and lightly salt. Melt butter in a frying pan. Flour the slices of pumpkin, dip the egg and then the breadcrumbs, pressing lightly on each slice. Fry them in the butter until golden. Drain onto absorbent paper and serve hot.
