Cheesy flat bread ''Focaccia al formaggio''

Ingredients, amounts for 6 people:
- hard wheat flour: 11 oz
- Ligurian cheese or 'stracchino' (soft cheese from Lombardy): 1 lb 2 oz
- oil:
- salt:

Preparation:
Put the flour on a pastry board and add 2 oz of olive oil and mix together with the fingers adding cold water in the right quantity until obtaining a soft dough. Form a roll and leave to rest for about one hour in a warm environment. After one hour take the dough and knead again for some minutes, stretching the dough with the rolling pin until forming two very thin disks. Place one of the dough disks on a baking-tin greased with oil, add the cheese cut into cubes and cover with the second disk of dough and with the point of the fingers pinch the dough to form an edging. Season the dough with the olive oil and salt, cook in a very hot oven at 250° C/ 500° F/ Gas Mark 10 for about 10 minutes until the surface becomes golden. Serve hot.
