Nut sauce ''Salsa di noci''

Ingredients, amounts for several people:
  • garlic: ½ clove
  • milk:
  • curdled milk or cream: 3 tbsp
  • soft inside of bread after crust has been removed/breadcrumbs:
  • walnuts: 1 lb 2 oz
  • olive oil:
  • salt:
Preparation:
Peel the nuts and scald. Put into a mortar and crush with the garlic, the breadcrumbs soaked in milk and well squeezed and salt, until a creamy mixture is obtained; then add a little at a time and always using the pestle, some spoonfuls of olive oil, the milk curds until there is a - not very liquidy - sauce. In case the sauce is too compact add a little of the fresh cream or milk curds.
