Ingredients, amounts for 4 people:
  • butter:
  • white flour: 11 oz
  • grated Parmesan cheese: 2 oz
  • milk:
  • soft inside of bread after crust has been removed/breadcrumbs:
  • salt:
  • sausage: 5 oz
  • eggs: 3
Preparation:
Sieve the flour into a heap onto the work surface, add the eggs and make up a dough adding water as required. Leave the pasta aside for a little while. In the meantime, soften the breadcrumbs in the milk, then squeeze out the excess milk and put into a bowl with the broken-up sausage and the grated cheese. Mix these ingredients together well. Roll out a thin layer of pasta and cut out a number of rectangles. In the centre of each rectangle place 1 teaspoon of the filling, fold the pasta over lengthwise and press the edges down well to form a half-moon shape. Cook in boiling, salted water, drain and serve immediately with melted butter and plenty of grated Parmesan cheese.
